A hand knife (20, 120), of the type having a ring-like rotary driven blade useful for cutting meat and other suitable products; a blade housing (24, 124, 224) for a hand knife; and a circular blade (26, 126). The blade housing has a generally circular groove (38, 138, 238) to receive a ring gear portion (56, 256) of the blade while a cutting portion (60) extends from the housing. One arcuate wall portion (38b, 138b, 238b) of the housing is frusto-conical and faces a similarly contoured peripheral portion of the blade ring-gear. In the preferred construction the housing recess is formed by a cylindrical wall that surrounds the ring-gear portion of the blade and by a frusto-conical wall that is encircled by the ring-gear portion of the blade. A blade retainer (28, 128) secured to the handle acts against a radial flange (62, 162) of the blade when tightened, to retain the blade within the groove, and when loosened allows removal of the blade from the housing.

A manual knife for cutting and cutting meat consists of a handle 1 having an elongated cylindrical part 2, an arcuate front surface 3 and a supporting surface k perpendicular to the arcuate front surface 3. On the handle a body 5 is fixed, in which is placed a continuous annular blade 6 mounted in the housing 5 rotatably around an axis, perpendicular to the longitudinal axis of the handle 1. The continuous annular blade is provided with one end of the cutting part 7, and from the opposite with a gear part 8. Externally The surface 9 of the housing 5 is cylindrical and has two axially located ends. At one end 10 of the housing 5, at some distance from the outer surface 9, an annular arcuate groove 11 is made, which is open towards one of the ends of the housing, formed by arcuate concentric walls 12 and 13 and a flat bottom 1, while one of the walls has a cylindrical shape. The gear part 8 of a continuous annular blade 6 is located in the gap between the walls 12 and 13 of the groove 11. The shape of the inner and outer side surfaces of the gear part 8 of the blade 6 corresponds to the shape of the side surfaces 12 minutes and 13 grooves 10. The width of the grooves 11 in the open part bolshii width at the bottom of the latter.
On the end part 15 of the handle 1, a recess 1b is made of an axially elongated shape and shifted in
horizontal direction relative to the plane of symmetry 17 of the handle 1, passing through the axis of rotation 18 of the blade and the center of the arc of the front surface 3. The recess is made open in directions parallel to and perpendicular to the plane of symmetry 17, and has a shape and size corresponding to the shape and the size of the operator’s thumb.
To fix the housing 5 on the handle 1, on the front part 15, there are a support surface 4 and screws 19. On the housing 5 there are two
longitudinal parallel groove 20, the size and location of which corresponds to the diameter and position of the screw 19 of the handle. To hold the blade 6 in the housing 5 on the lower surface of the end portion of the handle 1, a screw 22 is fastened with screws 21.
Inside the handle 1 in bearings 23 and 2, there is rotatably mounted shaft 25 with gear 26 at the end. Gear 2b is installed with the possibility of interaction with the toothed part 8 of the blade 6. The shaft 25 is rotated from the electric motor by means of a flexible shaft.
The device works as follows.
Before the start, an electric motor is turned on, which, through a flexible shaft, drives the shaft 25 with a gear 2b at the end. Through gear 2b, the rotation is transmitted to a continuous annular blade 6. The operator, taking the knife in his hand, brings it to the cut piece of meat and starts cutting. Due to the rapid rotation of the blade, cutting does not require any effort on the part of the operator. The cut piece of meat passes through the inner hole of the annular blade 6 and falls onto the pallet. Due to the fact that the serrated portion 8 of the continuous blade 6 is placed in an annular arcuate groove 10, the width of which in the open portion is greater than the width at the bottom, and the shape of the serrated portion 8 of the blade corresponds to the shape of the walls 12 and 13 of the groove The blade 6 is self-centering relative to the walls 12 and 13 of the groove P, which ensures the minimum gap between the walls 12 and 13 and the gear part 8 of the blade 6, and, consequently, reduces vibration and noise when working with a knife.
Placing the toothed part of the blade in the groove at the end of the body also prevents the contact of the toothed part of the blade with the bone, therefore, improves the quality of the cut and prevents clogging of the toothed surface with pieces of meat.
Maintenance of the knife and blade replacement in the proposed device is also simple. To replace the blade, it is enough to unscrew the screws 21 a few turns, after which the blade 6 falls out of the housing 5 itself. Install the blade in the case in reverse order. To replace the housing 5, it is enough to unscrew the screws 21 and loosen the screws 19, after which the housing 5 can be easily removed.
The presence on the front part 15 of the handle 1 of the recess 1b of an elongated shape and shifted relative to the plane of symmetry of the handle makes it possible to fix the position of the operator's thumb on the handle and thus prevent spontaneous rotation of the knife in the hand. This facilitates knife handling when cutting animal carcasses.
The use of the invention makes it possible to reduce vibrations, improve the usability of the knife and the handle to it, and facilitate the manipulation of the knife. In addition, knife maintenance is simplified.
